New Zealand Seafood Recipes
REFRESHING TUNA SALAD
Ingredients
Preferred measurement of units
1 x 310g11 oz can tuna, drained & flaked
2 cucumbers, peeled & thinly sliced
1 onion, finely chopped
1½ cups cooked long grain rice
Dressing
1 cup sour cream
2 Tbsp lemon juice
1 Tbsp parsley, finely chopped
Salt & pepper to taste
Method
Place tuna, cucumber, onion & rice in a bowl.
To make dressing: mix together sour cream, lemon juice & parsley. Season to taste.
Pour dressing over salad ingredients & toss lightly to coat.
Chill at least 1 hour before serving.
Serve in a salad bowl lined with lettuce leaves.
