BAKED STUFFED SQUID
Ingredients
2 cleaned squid tubes (about 500g16 oz in total)
Stuffing
2 tbsp oil
1 clove garlic, crushed
1 stick celery, finely chopped
¼ cup tomato puree
1 egg, beaten
1 cup cooked long grain rice
1 x 150g5 oz can shrimps, drained
2 Tbsp lemon juice
Salt & pepper to taste
Sauce
¼ cup tomato puree
¼ cup water
1 Tbsp oil
Method
To make stuffing: heat oil in a saucepan, saute garlic & celery 2-3 minutes. Remove from heat & combine with tomato puree, beaten egg, rice, shrimps, lemon juice & seasonings to taste.
Stuff cleaned squid tubes with stuffing & secure ends with toothpicks.
Mix sauce ingredients together in a small baking dish.
Place stuffed squid tubes in dish & spoon sauce over.
Cover & bake at 180°C356F for 30 minutes.
To serve, remove toothpicks & slice into 1cm rings. Accompany with salad.
