MATSUO SQUID
Ingredients
Preferred measurement of units
2 cleaned squid tubes (about 500g16 oz in total), cut into strips, 1cm x 3cm
2 Tbsp oil
1 onion, finely chopped
½ cup dry white wine
2 Tbsp tomato paste
1-2 Tbsp finely chopped parsley
3 cups cooked long grain rice
Salt & pepper to taste
Method
Heat oil in a frypan, add onion & cook 3-5 minutes.
Add wine, tomato paste & parsley & cook 5 minutes.
Add cooked rice & cook on high, stirring occasionally, until very hot.
Finally add prepared squid & cook only until squid turns white, approximately 2-3 minutes. Season to taste.
Serve immediately with a tossed salad.
