New Zealand Seafood Recipes

Ingredients
Preferred measurement of units  

500g16 oz scallops, cleaned

Juice of 4 lemons or 8 limes

½ cup olive oil

1-2 cloves garlic, crushed

1 Tbsp spring onions, finely chopped

1 Tbsp green chillies, finely chopped

1 Tbsp parsley, finely chopped

Salt to taste

Method

Place cleaned scallops & lemon or lime juice in a non-aluminium bowl.

Cover & chill overnight in refrigerator (they will change from translucent to opaque).  Drain well.

Combine remaining ingredients & toss scallops in this dressing.  Chill 1 hour.

Serve immediately on lettuce leaves.
