SPICE COATED TARAKIHI

SPICE COATED TARAKIHI
Ingredients
Preferred measurement of units  

Serves 4 

4 tarakihi fillets

2 Tbsp whole coriander seeds

1 tsp cumin seed

2 dried chillies

1 tsp cracked pepper

2 whole star anise

1 cup tomato juice

1 tomato, finely chopped

1 tsp parsley

1 tsp dill

½ small onion, finely chopped

2 cucumbers, finely chopped

A little garlic

Method
Place the coriander, cumin, chillies, cracked pepper & anise in an oven proof dish & put into a hot oven for 4 minutes. Remove from oven, then lightly grind spices in a mortar & pestle.

Coat the fish in the spice mix then cook in a little oil & butter in a shallow pan.

Mix together the tomato juice, tomato, parsley, dill, onion, cucumbers & garlic & serve under, over or on the side of the fish.
