Spicy Thai Style Sauce

Ingredients
Preferred measurement of units  

Makes 40ml

4 green chillies, de-seeded and chopped

20 black peppercorns

1 onion, chopped

2 cloves garlic, squashed

2 Tbsp fresh coriander stalks, shopped

2 tsp lime rind, chopped

1 Tbsp fish or oyster sauce

1 Tbsp (or a thumb) fresh ginger, chopped

1 Tbsp peanut oil

Salt to taste

Method

Blend all ingredients until smooth, thin with a little water if necessary.

Season with salt if necessary.
