New Zealand Seafood Recipes

Fresh Herb Mayonnaise

Ingredients
Preferred measurement of units  

Makes approx. 250ml

2 egg yolks

Salt & white pepper

1 tsp Dijon mustard or dried mustard

1 tsp white wine vinegar or lemon juice

250ml olive oil

2 Tbsp fresh herb, chopped (Tarragon, dill or basil)

Method

Blend egg yolks, salt & pepper, mustard and vinegar.

With blender running, gradually drizzle oil into mixture. Do not over process or it will become too thick.

Fold in fresh herbs. Season further as required.

Serve with freshly cooked rock lobster.
