Easy As French Sauce for Rock Lobster
Ingredients
Preferred measurement of units
Serves 4
1 medium onion, chopped
2 Tbsp dry white wine
Sprig of Thyme
1 bay leaf
4 Tbsp crème fraiche
Dash of cognac
Pinch of cayenne pepper
2 Tbsp fresh tarragon, chopped
Salt & pepper
Rock lobster flesh, cooked & diced
Method
Sauté onion until translucent but not brown.
Add dash of cognac, allow to reduce.
Add wine, thyme, bay leaf & cook until liquid is thick and syrupy. About 5 minutes.
Add crème fraiche and rock lobster flesh and simmer until warmed through.
Add tarragon, cayenne & salt & pepper to taste.
