HOT SMOKED SALMON & ORZO SOUP

HOT SMOKED SALMON & ORZO SOUP
Ingredients
Preferred measurement of units  

Serves 4 

4 cups fish, vegetable or chicken stock

2 cups water

1 cup orzo (rice-shaped pasta)

200g7 oz hot smoked salmon, broken into small pieces

¼ cup basil pesto

2 courgettes, trimmed & cut into small dice

Sea salt & freshly ground black pepper

Method

Bring stock plus water to the boil in a large saucepan.

Pour in orzo & cook for 5 minutes until beginning to swell in size.

Add salmon, pesto & courgettes & simmer for 5-10 minutes more until soup is thick & pasta cooked.

Season to taste & serve.
