Barbecued salmon with whisky sauce
Ingredients
Preferred measurement of units  
Great for the Xmas BBQ!

Sauce

1 nip of whisky

1 tsp dill

1 Tbsp sparkling wine

25g0.8Oz butter

Salmon

2 x 100g3½Oz salmon fillets

Salt & freshly ground black pepper

Flour

50g1.7Oz julienne vegetables

1 lemon slice

1 sprig fresh fennel to garnish

Method

Mix sauce ingredients together in a saucepan, place on heat & simmer until blended.

Roll Salmon in seasoned flour & place on grill with indirect heat. Cook till just done.

Stir-fry julienne vegetables in a wok till hot but still crunchy.

Place salmon on the bed of julienne vegetables & pour sauce over both.

Garnish with lemon slice & fennel.
